Borrowdale Teabread

Serves 4-8

Preparation time: 30 minutes

Cooking time: 1 hour


  • 9 oz plain flour
  • ½ teaspoon bicarbonate of soda
  • 16 oz mixed fruit
  • 1 oz butter (melted)
  • 6 oz soft brown sugar
  • 1 egg
  • ½ pint strong tea


  • Soak fruit overnight in the tea
  • The next day, stir in the sugar, beaten egg and melted butter
  • Sieve together the flour and bicarbonate of soda and fold them into the mixture
  • Divide the mixture between two greased/ lined 1lb loaf tins
  • Bake for one hour on gas mark 4 – electric 180c – 350f
